Taco Tuesday

Every Tuesday is Taco Tuesday at my mom’s.  We choose Tuesday because it was the only day were the majority of my family are able to get together for dinner. My mom makes a dish involving tacos. Most of the time it’s tacos with different kinds of meat, but we also do tortilla soup or enchiladas. Since my brothers and I and our cousins are 21 or older the requirements for us are we all bring beer (preferably Not Your Father's Root Beer) or wine to share, extras have to stay and we all enjoy the food. My mom is very big on seeing everyone on a regular basis instead of just holidays and it’s a good and fun way to see everyone without the stresses that come with holidays.

My daughters, my little sister, my little cousin and nephews range from two to eight and they all look forward to Taco Tuesdays. I think its cute when they all see each other how all their faces light up when they’re all playing. The kids even have their own kid table and none of them let any parents sit at their table.

Taco Tuesday goes well with my blog topic in the sense about food.  Since my youngest is very picky about only eating chicken, yes we do lie about the taco meat when it’s really not chicken.  Like chicken steak, ground beef chicken, chicken tilapia. Good thing since she’s only five and still pretty gullible.

Food for Thought


Repetition.  We do this subconsciously everyday. It’s taught to some of us at a young age, a child having a bedtime. A simple routine “repetition” we learn, some times without question.  In this photo I see a young girl waiting for a train to reach her destination. She does this everyday at least twice a day and doesn’t put too much thought into. This photo relates to my topic on with a couple reasons. One, chicken to me is can be easy to prepare and there are so many ways to prepare it, but I only know so many and unfortunately time isn’t on my side about learning that different one most of the time. This causes the repetition of the recipes has become bland and subconscious. Two, time goes by fast and waits on no one. So why waste time on indulging on the same recipes? 

I would like to get out the same chicken recipes to experience the “mmm that was good” and surprise my taste buds. Repetition isn’t always a bad thing, like children having a set bedtime. Most parents will agree that’s awesome, but not so much with food. It could even be the same recipe but with different ingredients changed to it that make something pop and you think to yourself wow, I should have done this a long time ago, or noticing your picky eater is actually eating their food, not spreading it around on the plate or throwing it under the table for the dog. And you get that sense of satisfaction for a split second. Feedback is always appreciated and wanted, so please share whatever you can offer because yes, sometimes it does take someone else’s idea for a wonderful change.

About this blog

I would like to share recipes on different ways to enjoy chicken. I decided to choose chicken because I have realized I’m stuck in this routine when it comes to eating chicken and the same several recipes has become boring. There’s tons of recipes online and in cook books and of course I can seem to remember or memorized a handful of them. I like chicken, and it goes great with lots of different food.

One of my favorite chicken recipes is Chicken Marsala. When I make this recipe I use noodles instead of potatoes. If you go to an Italian restaurant and order this dish its usually served with mashed potatoes. I personally feel this dish goes better with noodles. But, I'm Italian and my grandmother has always told me when I was little noodles was one thing I had to eat with any dinner meal so it makes sense to me on my preference. Believe it or not, this recipe can be a slow cooker recipe. I have not tried this, I'm kind of nervous to try it because I am so used to making it on the stove top and Im not sure if there would be a taste difference.

As for my picky daughter. She will eat this meal but not mushrooms. If someone from the future came to me and told me not to worry she will grow out of being such a eater or she eats this at 30 and eats the mushrooms I wouldn't believe even a picture. I do hope that she does grow out of it. My other experience with picky eaters is my youngest brother. He was such a picky eater as a child I'm honestly surprised he's 6'1 and is still a picky eater. He's not as bad as he was when he was younger but it's still surprising what he doesn't eat.

Like many I have a full time job and two daughters, time is limited but we all have to eat. However, of my two daughters, my youngest refuses to eat meat that isn’t chicken. I do not consider myself an expert at cooking. The 35-40 minute quick or cheap meals are ideal but slower cooker meals are wonderful and lovely too. I would like for my readers to give any kind of helpful feedback whether it’s recommendations, changes you’ve made and liked or disliked, tips or ideas. I hope to receive different recipes, advice from parents or family members of picky eaters, former/current picky eaters, and any advice is appreciated.
